Ingredients
- 100g (1 cup) fresh kale or baby spinach
- 150g raw chicken breast
- 30g brown rice, raw
- 250g pumpkin
- ½ tsp olive oil
- 40g avocado
- 100g rosa tomatoes
- Chilli flakes
- 1 tbsp balsamic vinegar
- Salt & pepper to taste
- Smoked paprika
- Lemon juice
Method
- Cook your rice according to the package instructions.
- Sprinkle the olive oil over the pumpkin.
- Add the salt & pepper and pop the pumpkin into the air fryer for 15 minutes at 180°C. Alternatively, roast your pumpkin in the oven.
- While your pumpkin is cooking, heat a non-stick pan with Spray & Cook and pop your chicken breast on the heated pan with some spices and smoked paprika.
- Finish the chicken off with a dash of water and lemon juice before it sticks to the pan. It creates a delicious marinade from a tiny bit of water and lemon juice.
- Slice your avocado and tomatoes before you assemble all the raw and cooked ingredients.
- In a serving bowl, start by layering the bowl with your greens, add your cooked rice, sliced chicken breast, fresh tomatoes and pumpkin, and top it off with avocado.
- Finish with a sprinkle of chilli flakes, balsamic vinegar, salt & pepper.
Tip: Make double portions of everything and have this over a few days.
