Ingredients
- 150g dry penne pasta
- 600ml water
- 150g lean diced bacon
- 120g avocado
- 25g feta cheese
- 40g cos lettuce
- 100g cucumber
- 1 tbsp apple cider vinegar
- 2 tsp olive oil
- 1 tsp honey
- 1 tsp mustard
- Salt & pepper to taste
Method
- Fill a medium sized pot with 600ml of water and place on high heat.
- Once this is boiling add the pasta and cook for 10–12 minutes until cooked through.
- Once cooked, drain the excess liquid and set aside.
- Whilst the pasta is cooking add the bacon bits to a small frying pan and place on high heat (no need for oil as the bacon creates its own). Cook until crispy and then remove from the heat.
- Quick honey mustard vinaigrette: place the apple cider vinegar, olive oil, honey, mustard, salt and pepper into a small container and whisk to combine until a smooth consistency forms.
- To prepare the vegetables: slice the avo into blocks, dice the cucumber and finely shred the cos lettuce.
- To a large bowl mix together the cooked pasta, crispy bacon, avo, cucumber and cos lettuce.
- Crumble the feta into the mix and pour over the vinaigrette.
- Mix to combine.
- Season with salt and pepper and dish into serving bowls.
Tip: Prep the bacon and pasta ahead of time, then toss in the avo and feta when you're ready to eat.
